Preheat oven to 325 F. Spray bridgefold glazed mini pans with Pam (aerosol shortening spray); set aside. Place papaya puree, shortening, and eggs into mixing bowl. Mix on slow speed to break eggs and combine liquids, approximately 30 s. Add flour, sugar, baking soda, salt, nutmeg, and cinnamon to liquid mix. Beat 1.5 to 2 min on medium speed until all ingredients are thoroughly mixed. Use no.8 scoop to scale papaya bread mix into mini loaf pan, 1 scoop per section. Bake 55-60 min. Cool on rack. Yield: 12 4 oz loaves. |
