Blend all dry ingredients and add to the water. Begin heating. In a blender, mix the soybean oil and tofu. Add the soybean oil/tofu mixture to the other ingredients when the water temperature of dry ingredients/water reaches 100 F. Pasteurize at 160 F for 30 min. Homogenize hot mix using a two-stage homogenizer: 1 st stage---1500 psi; 2nd stage---500 psi. Cool, add flavorings, then freeze with a 90-100% overrun. Recommended Flavoring Systems: Maple Nut Flavored Product---After cooling, add 8.3 oz of Schilling/McCormick artificial maple flavoring for every 100 lb of mix. Add walnut chips or other nuts to desired appearance. Chocolate Flavored Product---For a chocolate flavored product, replace half of the Maltrin M250 corn syrup solids and 6% of the soybean oil with 2.5% powdered cocoa and 3.1% sugar. Vanilla Flavored Product---To achieve a vanilla flavored product, add a liquid vanilla concentrate to desired taste. Additional Flavoring Suggestions---Add coffee or butterscotch fla |
