The required amount of water (less the quantity necessary to dissolve the alkalies) at room temperature (not hot) is placed in the cooking kettle and the agitator started. Then the weighed amount of casein is dumped in and soaked for 15 to 60 minutes. While the casein is soaking, the alkalies (if in solid form) are dissolved in any convenient amount of water. This usually is done by the use of live steam, although other methods, such as heating on a hot plate, with stirring, are also satisfactory. When solution is complete, the concentration is adjusted by addition of water. The alkalies are added to the casein-water mixture and the steam turned on in the kettle jacket. during the heating-up period the casein usually goes through a thickening stage and it is essential that agitation is adequate and thorough.
