Preservation of Casein Solutions |

In the first place, it is very important to store casein in a cool,
dry and well-ventilated storeroom. If the casein powder is allowed to
Become moist and warm, bacteria spores and molds grow very readily,
making it more difficult to obtain good casein solutions.
Considering the preservation of casein solutions, it is assumed that the
solution is prepared by cooking 1 part of casein with 4 to 5 parts of
water in the presence of sufficient alkali to dissolve the casein. It
should be remembered that the efficiency of preservatives for solutions
is governed largely by the concentration of the preservative inn the
water present and not on the ratio of preservative to dry casein. The
situation is entirely different, of course, when the final sheet of
paper is considered.
