Cook prepared tomatoes to desired solids. Add vinegar to cooking vessel and heat to simmering point. Add salt and spice mixture to tomatoes. Add high fructose corn syrup to total mixture. Concentrate the mixture by cooking either under vacuum or open kettle process and add garlic and onions near the end of cook. Note: Cook to solids level so that filtrate of the chili sauce has a refractive index at 20 C of not less than 1.3784. |
