Imitation Hollandaise Sauce |

Lemon Juice/1.50 Sodium Benzoate/0.05 Potassium Sorbate/0.05 White Vinegar (40 gr)/9.00 Pregelatinized Starch/4.00 Egg Yolk (dry)/4.00 Butter/3.00 Natural and/or Artificial Flavors/0.50 "Merecol" FA/0.50 Salt/3.20 Water/52.80 Soybean Oil/21.30 Cayenne Pepper/0.10 |
配制方法: |
Add the dry egg yolk to three parts of water. Add the balance of the water followed by the pregelatinized starch. While mixing, add the salt and all dry ingredients. Add the "Merecol" FA to the soybean oil. This is then added to the mixture with agitation. While mixing, the melted butter is added, followed by the vinegar and lemon juice. Product is emulsified through a colloid mill. Final product can heated in a similar manner to Hollandaise sauce 150-160 F before serving. |
