    配制方法: have all materials in fine powder form and perfectly dry. when prepared on a small scale, the mixing can be done by passing through a sieve, mixibg well after each sieveng. on a larhe scale, sifting and mixing machine is necessary.
    materials for baking powders should be thoroughly air dried, not strength due to the tendency to a.sorb moisture from air.
    always package baking powders in air-tight containes.
    the small proportion of gas when the powder is mixed with the other materials used in baking. the union og the cream of tartar and the soda will continue to form carvon dioxide for some little time, giving perfect aeration.
    use the above powder the same as any good cream of tartar powder.
