    walnut breads

    配方组成: low-fat dry milk/8 oz
    yeast/8 oz
    oatmeal(soaked in water)/3 lb
    patent flour/14 lb
    california walnuts(chopped or didced)/6 lb
    salt/4 oz
    brown sugar/3 lb
    water/1 gal
    walnut-oatmeal
    shortening/1 lb
    配制方法: soac oatmeal in water. add yeast and soak for 4-10 min. add all ingredients except walnuts, and mix to development. add walnuts to final stage of mixing until fully incorporated. ferment 1 h. scale into desired weights. rest dough 15-20 min. wash loaves with egg wash and roll in dry oatmeal. make up and proof at 3/4. bake at 400 F (204 C).
