配方组成: |
"Reddi-Sponge"/9 oz. Eggs (Yolks)/8 oz. Roll* in/3 lbs. Water/1 gallon *Roll in a combination of butter and margarine or shortening. After Shortening/9 lz. "floor time", follow with 2 four-fold rolls. (Note: puff paste and butter or shortening can also be used for "roll-in".) Divide dough and make-up in cup cake pans. Sugar/1 lb. 2 oz. Yeast/10 oz. Flour, white/14 lbs. Salt/4 oz. |

Scale all ingredients into mix bowl. Mix to thorough development. Mixed dough temperature: 80'F. Floor time: 25-10 minutes. Proof: Slightly less to normal. Bake time: Normal. |
