I---Formulas Without Caseinate a) Dissolve the non-flavor ingredients in the water, with agitation. b) Add flavoring with agitation. c) Form emulsion by agitation or homogenization. d) Spray dry with spinning disc atomizer. Inlet temperature 310-350'F outlet temperature 180-190'F. This may vary with the dryer used, but the lowest outlet temperatures should be used that are consistent with satisfactory moisture content in the final product. II---Formulas With Caseinate a) Dissolve 90% of the "MOR-REX" in the water, with agitation. b) Adjust pH to 6.5-7.0 with dilute NaOH. c) Mix the sodium caseinate with the remaining MOR-REX and add to the agitated solution. d) Adjust pH to 6.5-7.0. e) Add flavoring with agitation. f) Homogenize*. g) spray dry with spinning disc atomizer.
