Heat to 80'C. with agitation. 30 "Myverol" Type 18-00 Monoglyceride, 200 cc water, and 2 of Stepan LDA. Continue stirring until smoothly blended, then cool to room temperature with agitation. Upon standing at room temperature, pearl usually begins to develop within 24 hr. The rate of this development can be increased by seeding and tempering above room temperature, but below the melting or gelation point of the monoglyceride. |
