Soak beans overnight (about 12 hr---about 210% original weight), drain and weight. Account for water in soaked beans in total water.
Saute' onion and celery in shortening. Add salt and tomato puree. Simmer 1.5 hr.
Add all other ingredients except vinegar and simmer 1/2 hr. Stir in the vinegar just before filling the cans at 160-170'F.
Process 75 min at 10 psi (240'F). |
