Simmer 3 pounds of diced onions in a small steamjacketed kettle. When onions are soft, add 3 pounds of ground salt pork. Saute until pork and onions are soft, but not brown. Pour in 2.5 gallons of water and bring to boil. Meanwhile, blend until smooth in a vertical, beatertype mixer, 5.75 pounds of cracker crumbs and 2.5 gallons of water. Add the crackercrumb mix to the boiling onions and pork in the jacketed kettle. Blend a second batch of cracker crumbs; 5 pounds of crumbs and 5/3 gallons of water. Then pour 2.5 gallons of water into kettle, bring batch to a boil, and add the second batch of crumb mix. Again bring to a boil and introduce tomatoes (contents from four No. 10 cans), 8/3 pounds of salt, 3 ounces "Huron" MSG (monosodium glutamate), 4 fluid ounces of "Prozate" Seasoning Liquid, and 7/8 ounce white pepper.
