Sugar-sweetened jellies will have 225-275 calories to 100 grams, whereas jellies sweetened with "SWEET 30" will average 25-50 calories to 10 grams. Standards of Identity covering artificially sweetened jams, jellies, and preserves are available through the Federal Food and Drug Administration. Manufacturing procedures for artificially sweetened jellies are generally similar to those for the sugar-sweetened. there are, however, two basic and related differences between artificially sweetened and sugar-sweetened jellies. The sweetness of jelly is determined by the sugar contributed by the juice and the level of non-nutritive sweetener added. Sweetener level largely depends on the manufacturer's desires. It is important to remember that if calcium is contributed by the sweetener, it must be calculated into the total figure for added calcium. If sodium salts are used instead of the calcium salts of the sweeteners, the calcium requirement must be satisfied completely by other calcium salts |
