Cellulose gum is completely compatible with the sodium salts of cyclamate and saccharin. In bottling-plant practice, the cellulose gum may be easily dissolved by direct addition to water if it is first dry-blended with the sweeteners. by dry-blending, the particles of cellulose gum will be separated and thus uniformly dispersed in the water and will dissolve rapidly without agglomerating. Depending on the order of addition, certain precautions must be taken if the cellulose gum is to be used with calcium cyclamate and calcium saccharin. Cellulose gum can not be completely dissolved in the presence of the calcium ion. The cellulose gum will be only partially solubilized, thereby reducing its effectiveness in a beverage, and causing some undissolved gels to remain. Because of this, dissolving the cellulose gum in a solution of the calcium salts of the sweeteners is not recommended.
