Many fats, oils, waxes, juices, and other liquids can be decolorized by oxidation. Hydrogen peroxide is an extremely powerful agent for decolorizing them and is preferable to other oxidizing agents because of its high purity and the fact that the reaction product formed during bleaching is water and thus does not contaminate the product. The usual method of bleaching is to mix the required amounts of strong peroxide with the juice, oil, or melted fat or wax by thorough stirring for a sufficient length of time to obtain the desired results. Increase in temperature and/or addition of a little alkali will assist the bleaching action. Localized violent reactions, accompanied by wasteful release of oxygen, may occur when strong peroxide is poured into some liquids, such as sugar juice. This can be avoided by first absorbing the peroxide in a porous solid, such as ground or pulverized kieselguhr or diatomaceous earth, and then stirring the mixture into the liquid to be decolorized.
