配制方法: |
blend "seagel" SP with ten times its weight of sugar. add above blend to cold water with good agitation. add remainder of sugar, corn syrup, and preservatives, and heat to 85 C (185 F). maintain solution at 85 C (185 F) for 10 min under slow agitation (avoid beating air into system). add flavor and color, homogenize if desirble, pack, and cool. NOTE 1: if sugar syrup is used, slowly add the "seagel" SP with mild agitation and proceed to heat. NOTE 2: a suitable fat can be incorporated, combined with butter flabor, to formulate a buttery maple spread for pancakes or butter- fla-vored spread for toast. if fat is incorporated, the higher lever of "seagel" SP is required and homogenization is suggested. NOTE 3: low D.E. corn syrup is usggested for body. |
