Two general approaches can be taken in the production of low-calorie puddings. First, sugar and all or most of the starch can be omitted, and the texture built up with a combination of non-nutritive gums and thickeners. The second choice would be to retain all or most of the starch for texture and consistency. In both cases, the "SWEET 30" sweeteners would be used in place of sugar. The first approach will result in the greater reduction in calories, and the second should give a pudding of superior taste and texture. Many gums or thickeners are available; for example, Irish moss, alginates, tragacanth, CMC, pectins, and starches. |
