Walnut Breads (Walnut-Oatmeal) |
配方组成: |
Salt/4 oz Oatmeal (soaked in water)/3 lb California Walnuts (chopped or diced)/6 lb Water/1 gal Brown Sugar/3 lb Shortening/1 lb Yeast/8 oz Patent Flour/14 lb Low-fat Dry Milk/8 oz |
配制方法: |
Soak oatmeal in water. Add yeast and soak for 4-10 min. Add all ingredients except walnuts, and mix to development. Add walnuts to final stage of mixing until fully incorporated. Ferment 1 h. Scale into desired weights. Rest dough 15-20 min. Wash loaves with egg wash and roll in dry oatmeal. Make up and proof at 3/4. Bake at 400 F (204 C). |
